Miniature Strawberry
Buffins(*)
The surprise in this buffin recipe is that the
delicious fruit flavor comes from a can of instant drink mix.
It usually yields 36 to 40 buffins.
1/2 cup (125 mL) strawberry-flavored drink
mix
3/4 cup (175 mL) milk
1 egg
2 tbsp (25 mL) vegetable oil
2 cups (500 mL) biscuit mix
Icing sugar
Preheat oven to 400 F (200 C)
Miniature muffin tin, greased
1. In a small bowl, combine drink mix, milk,
egg and oil. Beat with a fork until well blended.
2. In a large bowl, combine biscuit mix and
wet ingredients. Stir just until biscuit mix is completely
moistened. The batter will be soft.
3. Spoon batter into prepared muffin tin,
filing cups two-thirds full. Bake in preheated oven for 10 minutes
or until delicately golden but not brown.
4. Remove buffins from pan and sprinkle tops
with icing sugar. Serve hot.
