Editor: Judi Kingry, Lauren Devine

Robert Rose | April 14, 2006 | Trade Paperback

From the experts, the definitive book on home preserving.

Bernardin Home Canning Products are the gold standard in home preserving supplies, the trademark jars on display in stores every summer from coast to coast. Now the experts at Bernardin have written a book destined to become the Bernardin "bible" of home preserving. As nutrition and food quality have become more important, home canning and preserving has increased in popularity for the benefits it offers:

  • Cooks gain control of the ingredients, including organic fruits and vegetables.
  • Preserving foods at their freshest point locks in nutrition.
  • The final product is free of chemical additives and preservatives.
  • Store-bought brands cannot match the wonderful flavor of homemade.
  • Only a few hours are needed to put up a batch of jam or relish.
  • Home preserves make a great personal gift any time of year.

The 400 innovative and enticing recipes include everything from salsas and savory sauces to pickles, chutneys, relishes and, of course, jams, jellies and fruit spreads. You''ll find such treats as:

  • Mango-Raspberry Jam
  • Crabapple Jelly
  • Green Pepper Jelly
  • Pickled Asparagus
  • Roasted Red Pepper Spread
  • Tomatillo Salsa
  • Brandied Apple Rings
  • Apricot-Date Chutney

The book includes comprehensive directions on safe canning and preserving methods, plus lists of required equipment and utensils. Specific instructions for first-timers and handy tips for the experienced make the Complete Book of Home Preserving a valuable addition to any kitchen library.

    Awesome book

I picked this up at the library, not really expecting a whole lot, but on the initial flip-through it seemed adequate.

This book is more then adequate! It is a fabulous resource to have on hand for novices to experts. It is comprehensive, has loads of pretty pictures, is easy to read and answers lots of questions.

The Problem Solvers and Produce Purchase Guides have already come in handy and I've only made one thing (tayberry jelly!). It's an accumulation of all the internet advice we found last year, but didn't know if we could trust. Now I'm certain I'm not poisoning myself!

The only thing missing is sugar-free jams and jellies, but it may be that I haven't found it yet.

Definitely going to buy the book to have it always on hand, worth the $28!!!

What a GREAT book! I grew up helping my mom and grandma can but never as an adult have I had the confidence to try it on my own. Now with this book I am a total addict. Lots of great recipes, and easy step by step instruction. It has helped me make delicious goodies for myself and husband as well as excellent ideas for gift giving throughout the year! My Mom loves this book now too!!

After years of searching, finally a comprehensive book on canning. For those of us who grow gardens or are always combing the markets for fresh produce, Bernardin has produced a fantastic book with lots of updated, safe staples together with many new innovative and wonderful products. For years I have worried about the safety of using my mother's and grandmothers recipes, but for the lack of available recipes, I have been stuck with a handful that proved to be ok. Not now!! And, for the best part, with a spring release, I can plant my garden and PLAN all the good stuff instead of waiting until the fall. There are literally hundreds of great recipes and tips to satisfy a novice to canning and preserving. And for the experienced canner, it will provide hours of planning and inspiration. There are ideas for year round!! I LOVE it and highly recommend it!!
