About the Author

Daina Kalnins and Joanne Saab are registered dietitians with Toronto''s The Hospital for Sick Children. Together they have more than 20 years'' experience in pediatric nutrition and research, providing advice to both parents and physicians. Daina is also the mother of a two children, aged 6 months and 2 years, both of whom were consulted extensively in creating the recipes for this book.

Developed in association with the world-renowned Hospital for Sick Children in Toronto. The Hospital for Sick Children is acknowledged as one of the foremost children''s hospitals in the world, and has been providing leading-edge care for infants and toddlers since 1875. In the 1930s, when malnutrition was common among Depression-era children, the hospital''s Dr. Frederick Tisdall developed Pablum, which is now sold by Heinz as "The Original Infant Cereal." Today, with an international reputation for treatment and research programs in all areas of children''s health, the hospital treats some 340,000 patients each year.

Mashed Potato Casserole

This dish is a favorite with the young set, who all seem to love mashed potatoes. Anytime you have leftover mashed potatoes, use them in this recipe.

Preheat oven to 400° F (200° C)

4-cup (1 L) casserole, greased

 

3  large potatoes, peeled and cubed

1/4 cup (50 mL)  2% milk (see Tip*)

1/4 tsp (1 mL)  ground nutmeg

1/4 tsp (1 mL)  salt

1/4 tsp (1 mL)  freshly ground black pepper

2 tbsp (25 mL)  butter or margarine

half  small onion, finely chopped

1/4 cup (50 mL)  dry bread cumbs

1 tbsp (15 mL)  melted butter or margarine



  1. In a large saucepan, cook potatoes in boiling water for 20 minutes or until tender. Drain well; dry potatoes over low heat. Mash potatoes. Stir in milk, nutmeg, salt and pepper.


     

  2. In a small skillet, melt butter. Add onion and sauté for 5 minutes or until softened. Stir into potatoes.


     

  3. Spoon potatoes into prepared casserole. Combine bread crumbs with 1 tbsp (15 mL) of the melted butter. Sprinkle over potatoes. Bake in a preheated oven for 20 minutes or until heated through and crumbs are golden brown.

  • Carbohydrate: 12.7 g

  • Fat: 4.2 g
