    My husband is a very picky eater who enjoys high fat, high calorie foods and complains when given something to eat that is low fat. However, every recipe I have made him out of this recipe book he has thoroughly enjoyed.

    Janet and Greta have made a lot of old standby dishes sound so much more interesting and healthy. If the recipes are half as good as the ones in Looneyspoons I will be quite content. Even if you are not a foodie like me but like to know some food trivia and tips on eating healthier that doesn't sound like another lecture, try this one out. There are some real eye-openers in here.

    We have loved everything I've made from this book! Along with it being full of interesting bits of information, it lets you to eat healthy low-fat meals that I make after working all day to feed my husband and myself, friends, or entertain with. These easily prepared meals let me follow the weight watcher program and never once feel I'm dieting.

The Thigh Who Loved Me Recipe

As sisters and double-agents, we risked life and limb to uncover the secret formula for zesty, gooey, barbequed chicken thighs. You can deliver the goods to your dinner table knowing they're sure to please a crowd. Psst! They make great leftovers, too.

3 pounds boneless, skinless chicken thighs (about 12 pieces)
3/4 cup ketchup
1/2 cup salsa
1/4 cup honey
1 tbsp Dijon mustard
1 tsp chili powder
1/2 tsp ground cumin
1 tbsp cornstarch
  • Trim off any visible fat from chicken. Arrange thighs in a single layer in a 9 x 13-inch baking dish. Set aside.
  • In a medium bowl, wisk together ketchup, salsa, honey, Dijon mustard, chili powder, and cumin until well blended. Pour sauce over chicken. Turn pieces to coat both sides with sauce.
  • Bake, uncovered, at 400° for 45 minutes. When chicken is done, arrange thighs on a serving platter and keep warm. Pour sauce into a small saucepan, skimming off as much fat as possible. In a small bowl, mix the cornstarch with 1 tablespoon water until smooth. Add to sauce. Bring to a boil, and cook until sauce thickens, stirring constantly. Pour extra sauce over chicken or serve it on the side as a dipping sauce.

Makes 4-6 servings.

Hint: If you prefer, chicken breasts or drumsticks can be used in place of thighs. If using chicken breasts, bake them for 30 minutes, not 45.

Per Serving (based on 6 servings): 287 calories, 7.3 g fat, 2.0 g saturated fat, 33.4 g protein, 20.1 g carbohydrate, 0.8 g fiber, 140 mg cholesterol, 586.2 mg sodium, % calories from fat: 23%
