I read the author's first book and really enjoyed it. I was already maintaining a mostly vegetarian (and frequently vegan) diet when I started reading this series. Given my long-time interest in vegan and vegetarian cooking I have accumulated a number of cookbooks tackling the subject and was curious to see what new recipes the authors had to offer. I was disappointed to see how many recipes featured very, very processed foods including tofu and soy products such as fake meats and cheeses. A few of their salads looked interesting, but that was it. If you're interested in a vegetarian or vegan diet, go for it - but I would recommend choosing a different cookbook that features more fresh vegetables and whole grains. There are lots out there to choose from.
