    I have a few Indian cook-books and this is my favourite. Recipes are very easy to prepare. Once you stock up on the basic ingredients - beans, legumes and Indian spices - along with a stash of onions, garlic and ginger, it's really easy to put together tasty meals. Good descriptions of the ingredients, preparation methods and serving suggestions.

    At last a real Indian Cook book! This book was written by people that not only understand food but love food. The combination of traditional Indian flavors with clean modern dishes is beautiful. The methods and procedures are impeccable, the glossary of spices is incredibly relevant and descriptive. If you have never cooked Indian before you can easily follow along step by step, and the “spice” or “heat” ingredients are clearly marked so you have the option to make the dish as spicy or mild as you like. The recipes deliver complex and sophisticated flavors, and everything is from scratch, no substitutions, pre-mixes, or curry powders. I was really happily surprised by the accuracy of the recipes right down to the measurements for salt, these recipes were tested in the exact method they are printed in the book, no guess work needed or “add to taste” measuring. The only thing I feel I need to mention to the Indian cooking lay person (like me!) is a lot of the recipes do call for spices you can’t pick up at a common Canadian chain style grocery stores, because this is real Indian from scratch you will need to have access to an Indian grocery, or specialty spice store.

About the Author

Vikram Vij was born in India and grew up in Amritsar and Mumbai. He studied hotel management in Salzburg, Austria, before moving to Canada to work at the Banff Springs Hotel. He opened the original 14-seat Vij's Restaurant in Vancouver in 1994.

Meeru Dhalwala was born in India but moved to Washington, D.C., at a young age. Prior to moving to Canada, she worked on human rights and international development projects. She and Vikram live in Vancouver.
