Reviews

Rated 5 out of 5 by from Must-Have for Most Homebrewers! This is, hands down, the best book on recipe design I have ever read. That said, it is not a good book for beginners as it assumes a working knowledge of all-grain brewing. The book itself is divided into two sections: The first section covers the technical side of brew science, with chapters on how to calculate OG based on malt/extract characteristics, modifying water, beer colour, everything you'd want to know about hops, malt characteristics, etc. Yeast is the only topic not covered to my satisfaction; compared to the other topics covered in this portion of the text , yeast are covered only trivially in this book. The second section is a series of chapters covering the major beer styles. Each section includes a history of the style, a detailed description of the style, tables covering the malt bill, hops, and other characteristics of the beer, and comparisons of the composition of commercial and home-brewed versions of the style. The book is very accessible to any homebrewer, with many tables, graphs and figures used to illustrate difficult concepts & provide details beyond that found in most homebrewing books.

Rated 4 out of 5 by from Pretty amazing actually This book is a good book, but it does take some time to 'get to know' so to speak. This book does not TELL you how a recipe is made, it simply SHOWS you the average ratios of base grains/specialty grains/hops etc that are seen in successful award winning beers in other people's recipes. This is a huge tool, as this will help you make a beer that most people will enjoy providing your processes are down pat. I would recommend this book to anyone with a good knowledge of home-brewing(or commercial brewing), as it is not really meant for beginners.

Rated 4 out of 5 by from Scientific The author is a scientist and I am as well, so I was really looking forward to reading this book. Unfortunately, the formulas and equations in the first half were often boring. I wonder if he should have put them at the back, instead of the front, as they're not entirely necessary. The second half was an incredible scientific overview of each of the beer styles. In general, as a scientific field matures, it moves from categorization to quantification, and this is exactly what he has done! He defines each category by gravity, attenuation, bitterness, etc. He has formulated bitterness to gravity ratio's (BU:GU), which really help to describe the 'balance' of the beer. If you get bored in the first half, just jump into the second!
