Joan Nielsen is a cookbook editor, food writer, and co-author. She lives is Pacific Palisades, California.
Timothy J. Castle owns a specialty coffee brokerage and an international marketing and consulting firm specializing in the food and beverage trades. He is a correspondent for the Tea and Coffee Trade Journal and a columnist for The Coffee Journal he lives in Santa Monica, California.
