Rated 4 out of 5 by from Best Gluten free book ever!!!!! I have bought many gluten free books in the past and really never liked any of them. This one gives options of different flours you can work with. I was surprised that you could replace flour with cornstarch. The cornstarch recipes are the ones that I think come closest to the taste and consistency of white flour. The only good recipe I haven't found yet is a recipe for bread.
