Rated 5 out of 5 by from A staple in any kitchen I've had this book for almost a year, not sure why I waited so long to write a review... Every single recipe I've made from that book was sensational. They are simple, wholesome, nutritious, and most importantly, delicious! Some of my family's favourites are Cream of asparagus soup, Corn Chowder, Artichoke, fennel and olive penne, Portobello sandwich w/ sundried tomato aioli (to die for!!), Mushroom ragout, Millet black bean patties (I keep a constant stock in my freezer), Pad Thai summer rolls, Creamy shiitake and chickpea soup,... This cookbook is a staple in my kitchen. A must-have in any kitchen, vegan or not.

Terry Walters is a Certified Holistic Health Counselor who empowers individuals to make positive physiological changes through one-on-one health and nutrition counseling, whole food cooking instruction, workshops, public speaking engagements, and programs designed to support and facilitate change to a healthier life. Terry draws from extensive educational and life experiences including training from The Institute of Integrative Nutrition, The Natural Gourmet Cookery School, The Kushi Institute, and the Chopra Center.
