Rated 5 out of 5 by from A Must Have! If you could have only one culinary reference book in your collection, this is without a doubt the one you must have. Every professional or aspiring chef needs it in their collection. I have used this book extensively in my 12 years as a professional chef and have always found the answer to my questions. This book has even helped to settle disputes over culinary issues between myself and my collegues! It's a heavy book but definitely worth every once!
