Rated 5 out of 5 by from Simple and Delicious!! This book is full of simple and delicious recipes. I didn't think eating raw could be so easy! I’m not a vegetarian (although I only eat locally farmed free-range antibiotic and hormone free meat), but this book has still be an absolute blessing to my health. I use Judita’s smoothie recipes followed by oatmeal, yogurt w/ granola, or eggs with mushrooms and spinach for breakfast and her salad recipes for my lunch and dinners along with a meat and occasional grain of my choice. I have also been using some of her mocktail recipes (in her Raw & Simple book) in lieu of calorie packed alcoholic beverages that are super rough on your liver. I have been following this simple plan religiously for only 2 weeks, and my skin has cleared up, I've lost weight, my mood and mental clarity have improved, aches and pains are virtually gone, and my energy levels have sky rocketed. I honestly can’t even believe the results, and I’m only eating about 50% raw! Definitely a good buy.

Many of the books are either too complicated or way too simple. I was getting tired of buying new cookbooks for fear of wasting my money. This book is perfect for new raw foodists and old. the recipes are easy and innovative. The photos are colorful and make you salivate! I love this new raw cookbook. It has re ignited my raw flavours. I cant wait to try every recipe!!

Orange-Chocolate Mousse ParfaitDon’t tell anyone that the secret ingredient is avocado until they try this dreamy, decadent dessert.Soak time: 2 hoursPrep time: 30 minutesChill time: 2 hoursMousse2 large avocados2/3 cup (53 g) cacao powder3/4 cup (255 g) agave nectar1 1/2 teaspoons grated orange zestPlace all ingredients in a food processor and blend for 1 to 2 minutes until smooth, with the consistency of a thick pudding. Add more avocado if too thin. Scrape down the sides of the container with a spatula as needed. Vanilla Cream1 1/2 cups (180 g) cashews, soaked 2 hours1/3 cup (80 ml) coconut oil, warmed to liquid1/3 cup (80 ml) water1/3 cup (115 g) agave nectar1 teaspoon vanilla extractDirectionsPlace the cashews, coconut oil, water, agave nectar, and vanilla into a high-power blender and process until very smooth.Chill the mousse and cream for 2 hours or until firm, then layer into parfait bowls using a pastry bag or a spoon.Stored separately, the mousse will keep for 3 days in refrigerator and the cream will last for 1 week. Yield: Makes 8 servings.
