Rated 5 out of 5 by from Quick, easy and delicious The recipes in this cookbook are very quick and easy to make. Many of the recipes take advantage of canned beans, frozen vegetables, canned vegetables, or just rely on Lorna Sass's straightforward non-nonsense methods for getting lots of flavour with very little effort. I have had this cookbook for a couple of months and I have made quite a few of the recipes: Curry in a Hurry, Caribbean Black Bean Soup, Udon and Green Beans in Peanut Sauce and the Pozole. Some have become favorites that I will make again and again. These recipes are so easy it is unbelievable!! My husband has been so impressed with the results and the ease of preparation that he has also taken a liking to the book. He has made the Chili and the Tex Mex Soup - both with wonderful results. This is the perfect cookbook for weeknight cooking or when you are in the mood for something quick. My husband and I are not vegan, but we are vegetarian. We love the fact that the book has tasty and easy vegan recipes that do not rely on dairy or eggs. Throughout the cookbook she includes tips and modifications that you can make to her recipes – adding even more variety. I unconditionally recommend this book -She really has an amazing way of putting food together. I have two of Lorna's other vegan/vegetarian cookbooks and I am really impressed. I am sad that I did not hear about her great cookbooks earlier.
