Rated 3 out of 5 by from You need special equipment At first I was excited on getting the book. I've now had time to make some of the recipes. I have been making plant based 'cheeze' for 2 years and I am not new to the process (coming from someone who has been making Rejuvelac successfully for awhile). I was surprised to find Julie promoting special equipment and ingredients. I would have liked to have seen substitutions/steps to a Vitamix or a dehydrator - or ingredients like Irish Moss. I couldn't understand why she is using that ingredient - no technical reason is given? It's not an easy ingredient to get. The book has no resources where to buy ingredients. What are the substitutions for Irish Moss, White Truffle Oil, Modified Tapioca Starch? to name a few... I appreciate that she has included recipes where a Vitamix and dehydrator are not required. In the end it's those beautiful cheeses that lure you in and you need a dehydrator and wine cooler for those.. so be prepared to invest, or use the book for the other cheeses. So far, the recipes I've made haven't met my expectations. They taste more like nut spreads than vegan cheese. I am giving this review a 3* because it lacks substitutions, technical steps and reasons why ingredients are used etc etc.. This is not an ideal cookbook for a novice cook. If you are experienced making vegan cheese, this is a good book to have in your arsenal. I will continue to experiment with the book and I am hopeful to find a few good recipes out of it still.
