I also own numerous cast Iron pieces and multiple casserole dishes of various sizes. Why you ask? Because I have very little time many days to spend the time I enjoy preparing a meal or experimenting. I can prepare multiple dishes in my slow cookers and crock pots and pull it all together in a few minutes when I arrive home. If preparing a stew or soup I can throw in all in the slow cooker either the night before or in the morning befoore life intrudes and I am off at a run. Or if I plan and early start I can put together a breakfast casserole the night before and heat it up in the morning or put the slow cooker on and wake up to a hot delicious breakfast. Kids have recitals or a game that will run into the dinner hour, no problem salad in the fridge, Spaghetti is in the cooker and bread is buttered awaiting browning in the oven. Our lives are hectic at time and we need to cut down our time slaving in the kitchen, Slow Cookers, Crock Pots casseroles and one dish meals are there to help us do that. That doesn't mean I don't enjoy a meal of beef wellington of scratch lasagna as much as the next person, but time constraints keep me from indulging in one of my favorite hobbies, cooking. The recipes found her are well written and are easy to follow. Prep of ingredients may require additional cookery, but again if you do it the night before it is all in the fridge waiting for you to finish it off and cook it the next day. Rated 4 out of 5 by from Pretty easy recipes for comfort food Full of recipes both familiar and new to me, I would definitely say this cookbook is accessible to a wide range of people. Whether you want to learn recipes from other cultures or you just want to make a simple meal, or whether you're skilled in the kitchen or...just want to make a simple meal, there's something in here for you. When I was looking through the recipes, I noticed that most of the ingredients are pretty standard and easy to find at a local grocery store. To me, that's important in a cookbook because it's nice to be able to make delicious food without breaking the bank or going on a trek to find obscure ingredients. My one criticism of the book is that 2 of the 3 recipes I tried were not one-dish dinners. The soup used a couple of pans (which I'm not complaining about, just, it's not one dish) and the casserole required several pots and pans. I wouldn't quite call them one-dish dinners, even though they were fairly straightforward to make - I was expecting something simpler based on the title of the book. I made the Stovetop Mac 'n' Cheese with Ham & Peas (p.116), Caldo Verde (p.50), and Pastitsio (p.145) - all were great recipes! All in all, this is a great cookbook if you're looking for some fairly easy, very delicious recipes.
